<span style="font-size: large;">It's nearly ANZAC Day, but for people with coeliac (</span><span style="font-size: large;">celiac) disease, homemade ANZAC biscuits are not usually something that they can enjoy by just substituting the flour. There are of course GF oats available but for me anyway, these cost 10 x the price of normal oats! And I know that many people who eat gluten-free will not even eat GF oats anyway. </span><br />
<span style="font-size: large;">So, I had been wondering whether there would ever be a substitute that might work and... after some trial and error, I have come up with a recipe that I think is a pretty good alternative to the real thing! </span><br />
<span style="font-size: large;">I decided to use 100% puffed rice for these. I feel like it would work using GF rice bubbles too but I can't get those here.</span><br />

<span style="font-size: large;">120 g of fat/oils (I used 60g ghee + 60g coconut oil)</span><br />
<span style="font-size: large;">1/2 cup coconut sugar paste</span><br />
<span style="font-size: large;">2 tbsp water</span><br />
<span style="font-size: large;">2 tbsp golden syrup</span><br />

<span style="font-size: large;"><u>Preheat you oven to 160 °C + prepare a baking tray</u></span><br />

<span style="font-size: large;">1. Mix dry ingredients</span><br />
<span style="font-size: large;">2. Melt fats, sugar, water and golden syrup in a small saucepan</span><br />
<span style="font-size: large;">3. Add wet ingredients to the dry flour mix</span><br />
<span style="font-size: large;">4. Form round balls and space on the baking tray (leave adequate space, they will expand as they cook)</span><br />

¼ cup orange zest, or 2 tbsp of 100% orange marmalade</div>

<strong style="box-sizing: border-box;">What to do</strong><br />
1. Preheat oven to 200°C (400°F). Lay a piece of baking paper on a baking tray and set aside.<br />
2. Warm the milk and stir in psyllium husk. Add in orange juice and eggs. Whisk gently. Set aside.<br />
3. In a mixing bowl, add in all of the dry ingredients and mix.<br />
4. Melt the butter, coconut oil and coconut paste together.<br />
5. Add all remaining ingredients into the dry. (The milk mixture + the oil/sugar mixture + zest or marmalade + raisins) and stir. You will begin to get a dough like texture.<br />
<br />
<b>*If your mixture seems too sticky at this point, add a little more rice flour before kneading. </b><br />
<br />
6. On a floured surface, knead into a ball or log and cut into 10-12 even pieces. Roll into balls and transfer to your baking paper.<br />
7. For the crosses on top, there are many ways to make these - I used approximately 1/4 cup all-purpose gluten free flour, 1 tbsp icing sugar (or a different sweetener), vanilla and water mixed until I had a consistency that I liked. I piped the crosses on using a squeeze bottle.</div>

8. Bake at 200°C for about 25 minutes. All ovens cook slightly differently - so keep on eye on them! </div>

<li><span style="font-family: "arial" , "helvetica" , sans-serif; font-size: large;">Mix together the melted coconut oil, honey and vanilla. Then drizzle it over the dry ingredients and give everything a good toss until it’s evenly mixed. </span></li>
<li><span style="font-family: "arial" , "helvetica" , sans-serif; font-size: large;">Spread the mixture out evenly on a tray covered with large sheet of baking paper.</span></li>

Since I'm trying not to venture out of the house (Covid 19 restrictions) I decided to order some fresh produce online for the first time. I ordered basil and ended up with a huge bag which has meant we've eaten lots of pesto recently. It's been delicious. Mostly we had been having the pesto on pasta, gnocchi etc. But last night I made Pesto Pizza!</div>

It was so good! I need to share... Please note, each time I have made pesto, I literally just throw everything into my food processor and adjust according to our taste (that's just how I cook) but below is a guide if you're not like me! </div>

Pesto:<br />
1 cup spinach</div>

1 cup fresh sweet basil</div>

2-3 garlic cloves</div>

1/8 cup nutritional yeast</div>

1.5 tables spoons of lemon juice (I used one lime)</div>

2/4 cup cashew nuts (or I do a mix of cashew, walnut etc)</div>

1/2 teaspoon of sea salt</div>

<li>Spread pesto evenly over the crust with the back of a spoon.</li>
<li>Distribute the shredded chicken over the pesto, then the tomatoes. </li>
<li>Sprinkle fresh herbs and season with salt and pepper. </li>
<li>Drizzle with <a href="https://lovingmums-lovingmums.blogspot.com/2020/03/vegan-cheese.html" target="_blank">vegan cheese</a> (optional)</li>

<span style="font-size: large;">Well, I will attempt to use the extra time at home to upload some of the recipes that I have been meaning to share but never seem to get around to! </span><br />
<span style="font-size: large;">But first... my husband and I made gluten free gnocchi for the first time so I want to post this one to start off.</span><br />

<span style="font-size: large;">Recipe:</span><br />
<span style="font-size: large;">1 kg potatoes peeled and cut</span><br />
<span style="font-size: large;">250g gluten free flour</span><br />
<span style="font-size: large;">30g butter, margarine or dairy free alternative</span><br />
<span style="font-size: large;">2 eggs</span><br />
<span style="font-size: large;">salt and pepper</span><br />

<span style="font-size: large;">1. Cook potatoes, drain and mash. </span><br />
<span style="font-size: large;">(I don't have a potato masher so I used my food processor).</span><br />
<span style="font-size: large;">2. Add flour, butter, eggs and season with salt and pepper.</span><br />
<span style="font-size: large;">3. Take a portion of the dough and roll it out on a floured batch top into a 1cm thick rope.</span><br />

Bbq sauce would work or some tomato sauce mixed with soy sauce/tamari/coconut aminos. I top our okonomiyaki with okonomiyaki sauce, swirls of Japanese kewpie mayonnaise, some bacon bits, shredded nori and a sprinkling of sesame seeds.</span><br />

<li><span style="font-size: large;">Fry the onion wedges in 1 tablespoon of coconut oil and a pinch of salt for about 5 minutes - until soft and golden.</span></li>
<li><span style="font-size: large;">Set the onion aside (it will go on top of the curry at the end)</span></li>
<li><span style="font-size: large;">Melt the remaining coconut oil and then add the garlic and ginger.</span></li>
<li><span style="font-size: large;">Fry for 1 minute before adding in the spices and sugar.</span></li>
<li><span style="font-size: large;">Reduce the heat and fry for about 2 minutes.</span></li>
<li><span style="font-size: large;">Stir in the coconut milk and stock</span></li>
<li><span style="font-size: large;">Bring to the boil and then reduce to a simmer until slightly thickened (about 10 minutes). Stir </span><span style="font-size: large;">occasionally </span></li>
<li><span style="font-size: large;">Stir in the spinach leaves, lemon/lime juice and the salt and pepper to taste.</span></li>
<li><span style="font-size: large;">Cook for a further 3-5 minutes until the spinach has wilted.</span></li>
<li><span style="font-size: large;">Serve with rice, cauliflower rice etc.</span></li>
<li><span style="font-size: large;">Top with fried onion wedges and sunflower seeds.</span></li>

Even though the recipe only require <b>2 tablespoons of paste</b>, I used just over a cup of dates and it made enough paste to make at least 4 batches of gingerbread. So the first batch took me longer to make but after that, it was really fast once I had the date paste pre-made. The date paste is also easier to make in a larger quantity, unless you have a small sized food processor. </span><br />

<span style="font-family: "arial" , "helvetica" , sans-serif;">In a small saucepan on high, add coconut oil, coconut sugar and coconut milk. Using a whisk, slowly stir until mixture comes to the boil.</span></div>

<span style="font-family: "arial" , "helvetica" , sans-serif;">Turn down heat and continue to stir for 15 minutes or until mixture begins to thicken and become a darker caramel colour. Mixture will still be runny but will continue to thicken after you take it off the heat. If it doesn't thicken enough like today when the girls made it, just mix a little corn flour with some cold water and place it back on the heat, stirring continuously until the mixture thickens.</span></div>

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">1 teaspoon of cinnamon</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">1 very ripe banana</span><br />
